Ingredients
- 2 medium beets
- 1 sweet potato
- 2 medium parsnips
- 1 medium celery root
- 3 Tbsp. olive oil
- 1 1/2tsp. salt
- 1 tsp. garlic powder
- 1/2tsp. oregano
- Pinch of black pepper
Instructions
- Wash, peel and slice vegetables as thinly as possible, preferably with a mandolin.
- Place vegetables in a bowl. Mix olive oil with seasonings and pour over vegetables. Toss to coat.
- Lay vegetables on trays using different trays for different vegetables. Dehydrate at 105°F (41°C) for at least 8 hours.
